Servings: 4

Ingredients:
- 4 chicken thighs (a little over 1 lb)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- Lemon wedges for serving
- Chopped fresh parsley for garnish (optional)

Instructions:

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

2. In a small bowl, whisk together the minced garlic, olive oil, lemon juice, dried oregano, dried thyme, dried rosemary, salt, and pepper.

3. Pat the chicken thighs dry with paper towels and place them on the prepared baking sheet.

4. Brush the garlic herb mixture evenly over both sides of the chicken thighs, ensuring they are well coated with the flavorful marinade.

5. Place the baking sheet in the preheated oven and bake the chicken thighs for 25-30 minutes, or until they are cooked through and the internal temperature reaches 165°F (74°C). If you are cooking boneless chicken cook time will be 20-25 minutes.

6. Once cooked, remove the chicken thighs from the oven and let them rest for a few minutes before serving.

7. Serve the garlic herb chicken thighs with lemon wedges on the side for a bright citrusy flavor. Garnish with chopped fresh parsley if desired.

8. Enjoy your flavorful and healthy chicken that are packed with delicious garlic and herb flavors, all while being under 300 calories per serving!
